| Tiers | A section of a cake as in a three tier cake.. Each tier is typically made of 2 Layers of cake with icing or filling in between. A tier can be a single layer of cake depending on the style of cake |
| Stacked | Refers to a cake where the tiers are placed directly on top of each other without any separation |

| Fondant Icing | A rolled Icing that is very popular in Europe. It is rolled out and laid on the cake, then smoothed. Fondant has a light vanilla flavor. Almost all sculptures are done with fondant icing. Fondant results in a very smooth finish on the cake and lends itself well to cutting patterns and shapes like laces and bows. If allowed to dry it becomes very hard and will hold it's shape well. Fondant does dry to some extent when applied to cakes. Our cakes have icing under the fondant so that if one of your guests do not like the texture/flavor they can remove the fondant and still have regular icing on their slice. |
| Gumpaste Flowers | Gumpaste flowers are made out of "gumpaste"! This is
a sugar based product that is shaped and allowed to dry. They are
technically edible as they are basically sugar but there are wires in
them to provide support and allow them to be assembled into sprays,
bouquets, etc... They are basically permanent as long as they are protected from dust and direct sunlight. Brides often use them in a display with the cake topper after the wedding. |
